Green gram or Moong dal is a local, fast growing legume. It is a rich source of protein, fibre, vitamins and minerals. It can be used in many different ways, one of which is the green gram dosa.
Soak the moong dal and allow them to sprout overnight.
Grind the green gram sprouts into a paste, the consistency of dosa batter and add salt.
Pour the batter on the dosa pan with a little bit of oil.
Serve with coconut chutney.
We find this dosa tastes a bit like scrambled eggs, it may be the high protein content in the green gram. Again, this is easy to do, it’s healthy, tasty and local!!
