In India, kids are lady’s fingers before their mathematics exam, because apparently it helps! Now, we don’t know if that’s true. What we do know is that this wonder vegetable is filled with nutrients. It is rich in Vitamin C, dietary fibres and Omega 3, helping strengthen immunity, lose weight and boost memory.
We make a simple Vendakkai Poriyal or Lady’s Finger stir fry, with ingredients you’ll have lying around in your kitchen.
- Rinse the Lady’s finger well in water. Wipe them dry. There should be no trace of water or moisture on the lady finger as then the lady finger can become slimy while cooking.
- Chop the washed lady’s finger into 1cm roundrels.
- In a pan, saute chopped onions, garlic, tomatoes, with some turmeric powder, chilli powder and a pinch of cumin powder.
- Add the chopped lady’s finger to this and let it cook until tender.
- Season with salt to taste
And your poriyal is ready! This recipe is super customizable. Add any spices or seasoning you like, or skip the tomatoes! Either way, it’s got to be delicious!
