Everyone loves to have desserts!
When the dessert is wholesome, cruelty free, made from organic ingredients then you can even taste the purity and love radiating from that dessert!
Phirni is an Indian sweet pudding which is usually made from rice, milk and sugar.
However, at solitude farm, we make phirni using varagu millet, peanut milk and jaggery.
We all know what ingredients are local in our surroundings! We have to be a little more creative, and make delicious recipes from whatever is easily available to us. If varagu millet is not local in your area, then maybe you have bajra or kutki or some other millet. You simply have to replace the varagu millet with whichever millet is available to you.
Ingredients-
Paste-
- ½ cup peanuts, soaked
- 1½ cups water
- ½ cup varagu millet (kodo millet), soaked
Remaining Ingredients-
- ½ cup water
- ¾ cup jaggery powder
- ¼ teaspoon cardamom powder
- 1 teaspoon rose water (optional)
- pinch of rock salt
Topping-
- 2 tablespoons almonds or cashews, roasted and chopped
Method-
- Place soaked peanuts and ½ cup of water into a blender and blend until smooth. Add 1 more cup of water to the blender and blend until smooth. Strain the peanut mixture and peanut milk is ready!
- Place peanut milk and soaked varagu millet into a blender and blend until smooth.
- Heat a pot. Add ½ cup water along with the blended paste of millet and peanut milk. Stir and cook for 15 minutes on medium flame. Keep stirring to avoid sticking the mixture at the bottom.
- Add jaggery powder and cardamom powder to the same pot. Stir and cook for 5 more minutes on medium flame until a thick and smooth mixture is formed.
- Switch off the stove. Add rose water and rock salt and stir. Let it cool for 30 minutes. Then, keep it in the refrigerator for 1 hour.
- Add the topping and serve cold.
Even if you are not a peanut lover, still you’ll love this dessert as it won’t taste peanuty at all! You don’t have to believe me blindly, make it and taste it yourself!
