While we often savor the succulent flesh and seeds of pumpkins, their tendrils, the delicate vines that extend from the plant, are often overlooked. However, these seemingly insignificant tendrils hide a treasure trove of nutritional value that deserves recognition.
These finger-like props are searching for branches and other plants to climb onto so that the pumpkin leaves receive maximum sunlight. When the tendrils catch hold of a branch, they start to wrap themselves around it, and the tendril becomes strong. If they are harvested before this, when they are tender, they can be thrown into salads, stir-fries or soups. Incorporating pumpkin tendrils into your meals is both easy and rewarding. In Thailand, I have been told that they are sold like this in supermarkets!
Pumpkin tendrils are not only safe to eat but also a rich source of vital nutrients.
