Sushi is a popular Japanese dish known for its unique taste and texture.
But did you know that you can also make vegan sushi that is just as delicious?
At Solitude, we have devised a creative way to make vegan sushi using a substitute for seaweed (nori) that is readily available in our surroundings.
We use rosella and pumpkin leaves, which we torch to make them more pliable. Then, we make a green chutney using seasonal fruit, peanuts, lemon, edible weeds, cherries, and coconut.
We apply this paste onto the pumpkin leaf/ rosella leaf and add sliced vegetables such as unripe papaya, mango, spring onion, and lady’s finger. Finally, we roll it up and tie it off with the pumpkin tendrils.
This recipe is highly customizable based on the availability of ingredients. You can substitute the vegetables with any other veggies you have on hand, and the chutney can be made with seasonal fruits.
