Brinjals are commonly eaten in Tamil Nadu. In the season, there can be a glut and eating brinjal gets a bit boring. Creating interesting recipes is a must to value local foods. At solitude, our Ammaas make delicious Brinjal Burger patties! Kids love it!

To make it, firstly soak some masoor dal in water, until it becomes soft. The next step is to cook the brinjal until it’s soft. This can be done by cooking chopped brinjal pieces in some boiling water in a pot, or, chop the brinjal thinly and saute it until it is completely soft. Meanwhile, saute some onions, garlic, ginger and green chillies and some grated plantains. Cook until the plantains are soft, but be careful to not burn the onions.
Grind the masoor dal, to a consistency thicker than that of vadai batter. Add the cooked brinjal, onions, garlic, ginger, green chillies and plantain to this. Season the batter with salt, cumin powder, coriander powder and a pinch of cinnamon powder. Make these into patties and pan fry it with just a little bit of sesame oil. 
Your delicious brinjal burgers are ready to be devoured!
This is not only delicious, but also highly nutritious. Brinjal contains Vitamin A and C, which helps protect cell damage. They are also high in fiber content and low in soluble carbohydrates which makes it a healthy vegetable for diabetics.
