Tabbouleh is a Mediterranean salad with finely chopped veggies and bulgur. Well, we localize it!
Millets are cooked in different ways, but the easiest is to toast it first, and boil it in twice the amount of water. Our recipe for the tabbouleh is best with Thinai or Foxtail millet, but Varagu or kodo millet works just as well. Finely chop tomatoes, cucumbers, garlic, green chillies, brahmi, mint leaves, rosella leaves, coriander leaves and spring onion. Add this all to a bowl with your cooked millet. Season it with salt, pepper and lemon juice.
Your Thinai (or varagu) Tabbouleh is ready! It is so delicious and wholesome. It is also such a simple and nutritious meal to make on a busy day.
