There are times when the prospect of whipping up a breakfast can be intimidating: just for those mornings when the clock seems to be ticking quicker than usual for everyone at home, and there isn’t much time left before school is meant to start for the children.
There is one superhero that I am fain to call on at moments like these – the Sweet Ragi Porridge! With the ingredients generally on hand, it takes me just ten minutes to have this as a breakfast course, ready on the table. And the high amount of fibre it contains, along with the slow release of energy it provides my children, is actually just the thing they need until they make it to lunch. They especially enjoy it with some peanut powder added in, and sometimes curd too.
The preparation:
- In a thick bottomed pan put 2 cups of water with a pinch of salt on to boil.
- In the meantime, in a bowl mix ½ cup of Ragi flour in 1 cup of drinking water until no lumps are left. Pour this into the boiling water and keep stirring on high flame as it cooks, for 6-8 minutes, or until a slight viscosity is attained, then turn the heat off.
- Mix in Jaggery powder as per taste (or your childrens’ tastes, but not too much!).
I have mentioned that my children enjoy it with powdered, roasted peanuts, but another delicious option – time & resource permitting, is the addition of grated Coconut, or even Coconut milk!
