Ragi! What’s that?
Well, it’s a millet. And millets are seeds that are grown in large fields like grains, but with much less water. Millets formed the foundation of agriculture in India and were traditionally part of the Indian palate. We make fermented porridge, ragi balls and roti out of its flour. While it’s no longer as popular in Indian households, at Solitude we continue to honour Ragi in our meals. We believe this delicious, mineral rich ingredient should be part of every fussy eater’s plate. And that brings us to children!
Just like shelves in a supermarket, finding space in your child’s plate is a tough nut to crack. But at Solitude we’ve had an amazing response for our Ragi choco chip crepe. Here’s the recipe for you to try at home!
- Take a cup of ragi flour in a bowl
- Add 1 tsp of jaggery powder and a pinch of salt and baking powder
- Add 1/4th cup coconut milk and half a cup of water
- The idea is to make a thin, almost watery batter so add water in batches until a pourable watery consistency is achieved
- Let the batter rest for 10 minutes
- On a hot iron girdle, pour a bit of oil and let it get hot
- Pour a ladle full batter and move the pan around so that the batter spreads and cooks evenly
- Sprinkle your choice of chocolate shavings on top
- After a minute, flip the crepe and cook the other side
- Serve it with honey and almonds or seasonal fruits
This is going to be a game changer, so keep that pan on the flame a little longer for your child to come back running, asking for more!
