Did you even know that raw jackfruit is edible?! Not only is it commonly used all over India, but it is also super healthy!
Due to its low acidity, raw jackfruit is one of the fruits that can be used in place of your typical consumption of carbs. In contrast to ripe jackfruit, raw jackfruit with a lower glycemic content can support blood sugar regulation. The unripe jackfruit is also power-packed with calcium and Vitamin C, boosting bone strength and immunity. Magnesium, a vital element that helps control the body’s neurotransmitter levels and promotes restful sleep, is abundant in jackfruit.
The raw jackfruit sabzi is a delight to eat with some chapatis or dosas, or even rice!
The unripe jackfruit can be a little difficult to work with. Our secret to making this easier is oil! Just rub some oil on your hands, knife and chopping board!
To make the sabzi:
- Chop the jackfruit into small cubes and add it to a pot of boiling water. Make sure there is enough water to cover the chopped fruit.
- Let this cook for 25-30 minutes until soft. Alternatively, pressure cook it for 8 or 9 minutes, or 3-4 whistles.
- To make the sabzi, add mustard seeds, 1 large chopped onion, 1 cup chopped tomatoes, 3-4 cloves of finely chopped garlic and some sliced ginger to a pan with oil.
- Cook till the onions turn translucent, and add the jackfruit with 1.5 tablespoons of turmeric powder and garam masala each. Add salt to taste.
Your Raw Jackfruit or Kathal Sabzi is ready to eat!
