One of our favourite ways to use tomatoes, is in a Caprese! It truly heroes the beautiful vegetable. It is quite simple – slice your tomatoes, and prepare your basil leaves, and arrange the basil leaves and tomatoes, alternatively in a circle, with the homemade vegan sour cream (made from homemade coconut yogurt, cashews, garlic and herbs), holding it together. Top it off finally, with a sprinkle of salt and ground pepper.
This dish is the perfect blend of tangy, creamy and fresh! We promise, you’ll never stop making it.
