COCONUT GROUNDNUT CHUTNEY

The coconut groundnut chutney is a staple here at Solitude. This simple chutney, is absolutely delicious, and is made with ingredients most likely to be lying around, in your home.

COCONUT GROUNDNUT CHUTNEY

The preparation:

  • Dry roast 1 cup of groundnuts in a pan on low heat, till it becomes golden brown. Remove from the pan and keep aside.
  • In the same pan, add 1.5 tsp coconut oil and roast 3 dried red chillies on low heat, till it changes colour and becomes darker.
  • In a mixer jar, add the roasted groundnuts, roasted dried red chillies, ½ cup fresh grated coconut and 2 garlic cloves.
  • Grind to make a smooth paste, and add water to adjust the consistency as needed.
  • Temper some mustard seeds and curry leaves, with a pinch of asafoetida in coconut oil, and add the tadka to the chutney.

Serve this Chutney with Idli or Dosa and enjoy!
