Millets are commonly referred to as “small-seeded grasses”. They are gluten-free & rich in fibre, proteins, minerals and vitamins. In fact, their high fibre content is best known for helping prevent bowel disorders which may well be one of the greatest banes of modern mankind.
Millets have been grown and consumed since the dawn of agriculture.They’re rain fed and hardy,these plants were the precursor to the entire civilsation.
Our modern focus on wheat and rice has not only depleted water tables and soil fertility due to heavy use of chemicals but they are also a major contributing factors to diabetes and other modern diseases.
Method for cooking most millets:
- When you wish to cook it, use 2 cups of water for every 1 cup of soaked millet. Add both in a thick bottomed pot, turn the heat on high and cover partially.
- When the water begins to boil, switch the heat to low, cover completely and keep that way until millet is soft. Cooked on open fire at Solitude Farm Café it usually takes about 15 minutes.
- Fluff it up with a fork, and your millet is cooked and ready!
