Drumstick soup

You have read about how drumstick is full of antioxidants, beta-carotene, vitamin c and help control blood sugar, lactation, bone strength and anemia? This is a great way to get your kids to eat drumsticks, and sneak it into their diets.

This yummy-tummy drumstick soup is so easy to make, and easy to love.

Drumstick soup

  • Chop the drumsticks into 2-3 inch segments.
  • Start by sauteing 1.5 cups of tomatoes, 1 cup onion, with some ginger, garlic, pepper, cumin and oil.
  • Once the onion turns translucent, add some turmeric and salt to taste. Mix well.
  • Add ½ litre of water to this and let it boil.
  • Once the water starts to boil, add the chopped drumstick.
  • Let it boil for a while, until the drumstick is cooked. If it is cooked well, you should be able to open the drumstick segment with your hands, and the seeds inside should be soft.
  • Turn off the heat, and let it cool.
  • Once cooled, filter the mixture and blend it in a mixer. Some of the water used for boiling can be added to bring it to a soup consistency.
  • Filter the soup again, after blending and boil it one last time. Check for seasoning and add as needed.
  • Garnish with some fresh chopped coriander.
  • You can also add coconut milk for creamier consistency.

When we use drumsticks for a sambar at the most we use two or three drumsticks. In the season there is a huge glut and it is important to create recipes that use more of this wonderful vegetable. This soup is a good example of the creativity needed to honour the gifts of mother nature.

If you have the possibility to plant the drumstick you will see how abundant the harvest is and such recipes will help you eat what you grow.
