At the Solitude farm, there is a Papaya bonanza and we are literally flooded with Papaya during the summer months. Papaya fruit can be made into a smoothie, one can eat it as is, make a fruit bowl or make jam. However, what do you do when you are almost flooded with Papaya? We tried multiple recipes and to our surprise, we found that papaya can be used as a substitute for tomatoes. Doesn’t that sound really interesting? We replaced the tomatoes with papaya and made a delicious pasta sauce. Making papaya paste sauce is simple,
Recipe:
- Fry ginger, garlic and onion, you could add a few chillies if you want it spicy. Fry them together
- Then add ripe fresh, papaya and cook for a few minutes, the papaya seeds can also be added
- Blend this in a mixer, along with some peanuts, salt, pepper, and herbs of your choice (we like indian oregano leaves)
Your papaya pasta sauce is ready, you can also grate raw papaya and add it to the sauce. The aroma of this pasta sauce is heavenly and it’s an interesting way to introduce it to children. We at Solitude take pleasure in curating such alternative ways of using fruits and vegetables and especially when mother nature gives us bounties. We consider it as a way of honouring nature.
