Pumpkin can sometimes be a tricky vegetable. It is difficult to incorporate new foods into your diet when you are not used to it. Kids love this Pumpkin soup with coconut milk. It’s a simple and subtle way of trying new vegetables like the pumpkin. In this bio-region, pumpkins are quite commonly grown, but people have forgotten the cultural value vegetables like these bring to the table.

To make the soup:
- Firstly, cook the peeled and deseeded pumpkin, with onions, garlic, ginger, pepper and salt in a pressure cooker with some water. Alternatively, you can boil it in a pot.
- Add the cooked ingredients to a blender, and add some of the water used for cooking it, and blend until it reaches a thicker soup consistency.
- Remove it from the blender, and add some freshly made coconut milk.
- Add the soup to a pan, and let it boil for some more time, before checking for salt. Add salt as needed.
Your soup is ready. Serve it hot! It’s warm and comforting like a mom’s hug!
