When guests come for a walt to the field, they are often surprised when I give them the Mushroom spinach to taste. They look at me in surprise and say yes, indeed this prolific weed tastes like mushrooms!
The flowers have a milder taste and can also be eaten.
If we take a little time to harvest this weeds which literally grow everywhere, We have been in our hands very tasty and exclusive ingredient.
As well as throwing these greens in a salad they can also be made into a simple stir fry.

Saute the usual suspects, ginger, garlic, sweet pepper etc add the spinach leaves, and a little salt. This is a unique dish, so simple to access and cook. Local weeds are not only tasty, thay are highly medicinal and have no ecological cost
