Pumpkin is an all-season vegetable that can be kept in the storeroom for a while. It can be used in many ways, from soups to curries, sweets to powder!

A really simple way to use it is to cut it into cubes without removing the skin; the skin is both nutritious and tasty, then sautee it with mustard, a little bit of grated coconut, and, if desired, add a bit of whole dried red chili.

It can be sided with rice, dosa, chapathi, roti, etc. There are many ways to cook a pumpkin; some people feel the skin is too hard and remove it. Sometimes we steam it and add nothing else, enjoying its natural flavor.
Local food is all about getting to grips with textures and tastes and using our creativity.
