Sometimes, it is the unattractive idea that luxury needs to be shunned in order to live more sustainably.
This is not true!!!! One of Her most luxurious gifts is the mango with which we have been making our own home-made vegan Mango Ice Cream. A true luxury!

Keeping in mind that cow’s milk can have greater ecological costs than local, vegan produce, this recipe substitutes it with just over-ripe Bananas. It’s a great way to even make use of Bananas that have become too ripe for your liking!

The process:
Take ripe Mangoes, scoop out and collect their flesh in a container that can go in your freezer. Add to this a few peeled over-ripe Bananas (for added sweetness and a creamy texture), and freeze all of the fruit.
Once frozen, blend the Mango and Banana in a mixi together, and voilà, vegan Mango Ice Cream at your home just like that!

It could be exciting to also add some coconut milk to your frozen fruits before blending – this will give it a nice texture and of course, flavour too!
